General purpose, high gluten flour that works well for many recipes. Perfect for pizza crust, pasta, bread, pastries, and long fermentations. "Tipo 00" refers to how refined the flour is, and indicates that it is refined further than regular flour, and resulting in using less of the outer parts of the wheat, while also creating a very finely ground product.
"00" is the finest grade in Italy - resembling baby powder in texture. Caputo's very slow grinding method, linked to the ancient art of milling allows them to create exceptional flours without damaging the starches, the organoleptic properties, and above all the authenticity of the taste.
Caputo mixes many qualities of the national wheat from Umbria, Marche and other Italian regions to obtain the basis of our product. Then integrated with grains from Northern Europe, in particular France, Germany and Finland. Resulting in products that are extremely natural, and processed without the addition of chemical enzymes or additives.
